Ingredients

Base

  • 120 g Butter
  • 150 g SR flour
  • 110 g raw sugar
  • 90 g Desiccated Coconut

Topping

  • 2 eggs
  • 1 teaspoon vanilla essence
  • 90 g Desiccated Coconut
  • 300 g brown sugar
  • 60 g Chopped walnuts

Recipe's preparation

    Base
  1. 1. Preheat oven to 180 degrees and grease an 18 cm x 28 cm (approx.) tin

    2. Melt butter 2 mins., 60 degrees, speed 4

    3. Add remaining ingredients

    4. Combine 10 secs., speed 5

    5. Scrape down, mix 2 secs., speed 3

    6. Press mix into tin using MC to smooth.

    7. Bake 15 mins.

  2. Topping
  3. Without washing bowl ...

    8. Combine eggs, vanilla, coconut and brown sugar 20 secs., speed 5

    9. Add nuts, combine Counter-clockwise operation"Counter-clockwise operation" 10 secs, speed 3

    10. Pour topping over base

    11. Bake 20 to 25 mins or until topping is firm.

    12. Leave in tin to cool before cutting

    Thank you for this recipe which I made gluten free by using gf self raising flour.
    It was quick and delicious.
    I was a bit concerned when adding the topping to the warm base but was worried unnecessarily as it turned out great.
    Would highly recommend this recipe, it will be on my regular list
