I'm cooking this todayRecipe's preparation
This is super easy and the proportions of the mix are up to you - love almonds? add more... like pepitas - chuck some in too!
Pre heat oven to 180 degrees.
Put the nuts in the TMX bowl and pulse a couple of times - I only do two bursts of 2 seconds on Speed 6 as I like my nuts chunky (!!!)
Put nuts aside and without cleaning the bowl pop in the coconut oil and maple syrup, cinnamon and salt. Mix on speed2/Heat 80 for about 3 mins. All you're doing is melting and mixing the oil and syrup - doesn't have to get too hot at all.
Then add the nuts and oats and give it a quick mix - speed 1 for about 20 seconds - you're just coating and mixing everything.
Spread mixture out on one or two large baking trays and roast in the oven for about 20 mins. I like my nuts toasted (!!!!) so I let them get really brown.
Let the mixture cool completely on the tins. I usually turn it all over when still warm to make sure it's nicely crumbly.
Store in an airtight container - will last for about 2 weeks.

Tip
This also is a great crumble topping or just to nibble when the muchies strike.

TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

This is absolutely delicious. I have made it twice now, with the second time making a double batch. I have been having it with fruit, yoghurt and chia pudding. Thanks for your recipe.
