Recipe's preparation

  1. 1. Heat milk for approx 10 mins on 37°C and speed 1.

    2. Mix Junket tablets with a couple of tablespoons of water. Add to milk. Mix for 1 min on speed 1.

    3. Prepare two bowls: pour 1L of warm water in the larger bowl and place the smaller bowl into the larger bowl. Pour milk into smaller bowl, place lid on top and stand for 1 hour.

    4. Cut the curds into 2 cm squares with a knife at a 45 degree angle. Stand for a further 10 minutes.


    5. Pour curds & whey back into Thermomix. Reheat on 37°C for 30 mins on speed “spoon”.

    6. Pour the curds & whey through the nutmilk bag, reserving the whey. Place the nutmilk bag of curds between two plastic strainers, resting 2L container of water on top. Stand for 30 minutes.


    7. Pour the whey back into the Thermomix, add the rice basket, and add water to fill. Bring contents up to 90°C, on speed 2.

    8. Cut the curds into pieces. Place the pieces of halloumi into the rice basket. Cook for 10 minutes, speed 2, at 90°C. The halloumi will rise to the top when it is done. This may need to be done in two batches.

    9. Remove halloumi and lie flat to cool. Pour 500mL of the brine into a container with 10g of salt.

    10. Add halloumi to brine and refrigerate.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
