Ingredients
Paleo Pancake Batter
- 100 grams whole almonds, activated or blanched
- 200 grams diced Pumpkin, steamed, or roasted
- 2 eggs
- 1/4 teaspoon baking soda
Variations
- Use half almonds and half desiccated coconut
- Use 1 large or 2 small bananas in place of pumpkin
- Add cinnamon and ginger (1/2 teaspoon each)

In the bolw of your Thermomix grind the almonds for 7 secs./speed 9 or until fine. If using half cocont and half almonds do the same.
Add the rest of the ingredients and puree 5 secs,/speed 6 or until it comes together as a batter. It can be cooked right away or left in the fridge until ready to cook.
Season a large flat pan by heating on low dry then greasing with ghee or coconut oil.
Dollop in spoonfulls of your batter and spread them out. Cook gently on a medium-low heat until starting to set.
Carefully flip and cook until done. Serve with butter and honey.
Note: this batter is very delicate, it only holds together once fully cooked so flipping your pancakes takes care and patience. I prefer to use the second cooking method as there is no risk of burning or breaking your pancakes, less cleaning up and my lil one isnt clinging to my legs while I try to cook. See below.
Line a baking tray with your Thermomat or baking paper and dollop on spoonfulls of batter.
Bake for 10-20 mintues until cooked through and set. Serve with butter and honey or EDC strawberry jam and whipped cream.

Tip
I find this makes enough for three of us, with one or two pancakes left over (sometimes). If you want to make more simply double it and keep any left over batter in the fridge or cook all the batter and keep some pancakes for the next day. They warm well in the over or microwave or are great cold.
