Ingredients

  • 200 g celery stalks, Cut into pieces

  • 8 sprig Fresh Flat Leaf Parsley, Leaves only
  • 150 g Himalayan salt
  • 1 tablespoon coconut oil

    Prep Stuffs
  1. 1. Add all ingredients except salt and coconut oil to mixing bowl and chop 10S/S6. Scrape down side of mixing bowl with spatula. 

     

    2. Add rock salt and coconut oil and cook 20M/120C/S1.                     Blend 1M/S5-9, increasing speed gradually, or until a smooth paste consistency is achieved. Transfer stock into an airtight container then place into the frige to store until use. 

     

Tip

1 Tbsp of stock paste is roughly equivalent to 1 shop bought stock cube.

To make vegetable stock, use 1 Tbsp per 500g water.

Stock paste keeps in the fridge for several months.

The salt in the stock paste is a preservative agent. When mixed with water it is not too salty.

If you decrease the salt, store in freezer.

Small quantities of sea veges such as dulse, wakame or kombu can be added to the stock for extra nutirents.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
