Ingredients

  • 400 g ripe bananas
  • 6 pitted dates, soak in hot water and 1 teaspoon bi carb for 5 minutes
  • 60 g coconut oil
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 6 eggs
  • 2 teaspoons baking powder
  • 70 g Coconut Flour
  • 20 g chia seeds

Recipe's preparation

  1. Preheat the oven to 170C or 150C fan forced

    In a seperate bowl, soak the date in boiling water and 1 teaspoon of bi carb for 5 minutes (softens them a bit)

    Combine banana, soaked dates (do not add the water, just the dates), coconut oil, cinnamon, vanilla extract, eggs and baking powder into the TM bowl and blend on SPEED 6 for 40 seconds until creamy and combined.

    Add coconut flour and chia seeds and mix on SPEED 3 for 10 seconds.

    Allow the mixture to rest in the bowl for 10 minutes to allow the flour and chia seeds to expand.

    Line a load tin with baking paper and spoon the batter into the tin, top with banana slices and/or shredded coconut and bake for 50-55 minutes. (times may vary depending on your oven.)

    Remove from the oven and allow to cool.

    This bread freezes well or can be kept in the fridge for up to 1 week.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
