Dough
- 1 portion five seed bread, From EDC
Scroll Filling
- 100 grams cheddar cheese, cubed
- 50 grams parmesan cheese, grated
- 50 grams Quince paste, homemade or purchased
- water, to sprinkle on top
- sunflower seeds, to sprinkle on top
- salt, to sprinkle on top

Prepare the dough as per recipe. After first prove knock down and, on a thermomat, shape to form a large rectangle about 1cm thick.
Place cheddar into mixing bowl and grate turbo / 2 secs. Repeat if required. Add grated parmesean and quince paste, mix turbo / 2 secs. Repeat if required.
Spread scroll filling onto prepared dough. Roll dough into a log (long end) and, using a plastic scraper/plastic knife, cut into slices about 1.5cm wide. Place onto greased oven tray so just touching. Sprinkle with water, then sunflower seeds and salt to taste.
Place into a cold oven. Set the heat to 200 degrees celcius and cook for 25-30 mins or until cooked. (putting them into a cold oven allows a second prove and helps make the bread lighter and fluffier).
Cool slightly before serving as quince past will be hot!

Tip
Freeze individual rolls in zip lock bags to take for lunches. Serve with soup, or as a tasty snack.
