Ingredients
Filling
- 125 gram unsalted butter, make from scratch first if desired
- zest thinly peeled from 2 oranges
- 95 gram almonds
- 110 gram brown sugar
- 70 gram dried cranberries soaked in juice of 1 ½ oranges that you used for the zest
Dough
- 300 grams lukewarm water, you can preheat this using your Thermomix to 37C if you like
- 2 tsp dried yeast
- 500-520 grams baker's flour
- 1 tsp salt
- 20 grams olive oil
- 60 grams raw sugar

Place zest of 2 oranges and 95 g almonds into the mixing bowl. Mill 8-10 seconds/sp 9.
Add 110 g brown sugar, 125 g butter and cranberries (if there is a lot of liquid left, you may like to drain them, but if most of it has been absorbed by the cranberries, don't fuss). Mix 10 seconds/sp 4-5. Remove from mixing bowl and set aside.
Without washing mixing bowl, place 300 g of lukewarm water and 2 tsp yeast into the mixing bowl. Mix 20 seconds/sp 2.
Place remaining dough ingredients into the bowl in order. Mix 5 seconds/sp 7 to combine. Using the interval setting, knead 2 min/"Dough mode" .
Place the dough into a prewarmed, lightly oiled Thermoserver or wrap dough in a Thermomat and allow to rise approximately 1/2 hour or until doubled in size. Part way through rising, preheat your oven to 200C.
When it’s risen take it out of the thermoserver or TM bowl and roll it out into a rectangle about the size of your Thermomat.
Spread reserved filling mixture over the dough using your spatula.
Using your spatula, cut strips of equal thickness in long lengths so you are ended up with long ribbons of dough.
Take one end of a dough strip and concertina fold it up back and forth till you get to the end. Pick up the ribbon and pop it upright into a greased springform tin that you have also lined with nonstick baking paper. Now follow this pattern till you have done all the ribbons. If you wish to have smaller pieces to 'pull apart' when it's finished, simply cut each ribbon in half and concertina each smaller ribbon.
Place the pull apart into a preheated 200C oven and immediately turn the heat down to 180C. It should take about 20-25 minutes to cook, but you will know it's done when it is nicely browned on top. Cool in pan for 10 mins then remove from pan and serve.

Tip
Just in time for Christmas with Cranberry and Orange flavours, this recipe could also be made in smaller, shaped baking vessels such as rings, stars, etc. If using smaller vessels, I recommend halving the ribbons for smaller pieces of pull apart. Enjoy!
This recipe can be easily made in the Model 5 as well.
