- 1 sweet potato, Small to medium
- 4 level tablespoons tapioca flour

Peel the sweet potato and roughly chop.
Add toTMX, Sp 6, 6 seconds.
Scrape down sides and check to see that it is all grated finely. If not, grate for another second or 2.
Add the tapioca flour.
Mix 3seconds, Sp 2.
Empty half the mixture onto a hot cafe press. Using a heat proof spatula press the pile into a flat circle and incorporate any outlying food.
Lock the lid down and cook for about 5 minutes, checking regularly. If you cook it to long it will go crispy, more like a taco shell, and too short it won't be hot through or bend properly.
The cooking time will vary with the size of your sweet potato.
Remove from the press, with an egg flip and repeat with the rest of the mixture.
