Ingredients

Panna cotta

  • 2 --- Bananas, ripe
  • 540 g coconut milk
  • 2 teaspoon Vanilla Paste/Extract
  • 2 teaspoon Gelatin powder, Iused an organic gut healing gelatin

Salted caramel sauce

  • 200 g coconut cream
  • 100 g Coconut sugar
  • 2 pinches Himalayan salt
  • 1 teaspoon Vanilla Exract

Toasted macadamias

  • 50 g macadamia nuts

Recipe's preparation

    Panna cotta
  1. add gelatin powder to some water to 'bloom' and set aside

  2. place bananas, coconut cream and vanilla and cook for 5 minutes at 100 degrees. Once finished blend for 1 minute on speed 9.

  3. allow mix to cool to 70 degrees, add gelatin and mix on speed 2 for 30 seconds. 

  4. Pour into ramekins and place into fridge to set for minimum 2 hours. 

  5. Salted caramel sauce
  6. add coconut cream, coconut sugar, salt and vanilla and cook for 3 minutes at 100 degrees. 

    Pour into a jug and set aside. 

  7. Toasted macadamias
  8. chop macadamias on speed 4 for 5 seconds. Toast in a frypan until golden. 

  9. Presentation
  10. tip panna cotta onto a plate once set, drizzle over sauce and sprinkle with macadamias. 

Tip

leave nuts out for nut free recipe.

    ive just made this and popped it in the fridge. but im cretain my complete inexperience in working with gelatin has meant this will be a complete failure. it didnt seem right so i googled gelatine afterwards and learnt that no, i did not do it right. i think i will have to have another crack soon, as just the panna cotta section of this recipe ticks all the boxes for me...sugar free, dairy free and grain free. plus ive been trying to work in some gelatin into my diet. so im keen to have a successful attempt at it.
