Ingredients

Biscof cheese cake

  • 1 jars Biscoff spread, 400g
  • 300 g thickened cream
  • 100 g Butter
  • 80 g icing sugar
  • 3 sheets gelatine
  • 280 g Biscof buscuits
  • 1 level teaspoons vanilla extract
  • 500 g cream cheese
  • 40 g hot water

Recipe's preparation

  1. 1. Place 3 sheets of gelatine separately into bowl of cold water for 5 minutes.
    2. Place open jar of Biscoff spread in the microwave for 1 minute . Set aside
    3. place 280 g of biscoff biscuits in Thermomix and blend on speed 8 for 6 seconds.
    4. Pour in 100g melted butter.
    5. mix on speed 5 for 15 seconds then place in cake tin spread out evenly .
    6. Clean bowl and place 500g cream cheese and mix on speed 3 for 10 seconds.
    7. insert whisk and turn to speed 4 pour in half the jar of softened biscoff spread. (200g)
    8. Pour in 300g of thickened cream and 80g icing sugar
    9. Squeeze excess water from gelatine sheets and placed them in cup of 40 g hot water and mix with fork and pour into mixture.
    10. Mix for a further 10 seconds then pour into cake Tin over the cake base.
    11. Refrigerate for half an hour.
    12. soften the remainder of the Biscoff spread and pour evenly on top of cheese cake.

    13 . set for 4 hours in fridge

    Great recipe but I made some changes as it would have been too sickly sweet for us....
    These notes are for my own purposes but may help others so I am posting here: Gelatin should be soaked in water for not much more than 5 mins so I didn't do this first as the other steps took me longer than 5 mins. Soaked them in 3 different bowls but may not have had to??

    No.s 6,7 & 8 above look like they are all one step?
    Used only 20gm icing sugar and didn't cover the whole lot with Biscoff spread as it would have been way too sweet.
    Instead I put a little on a teaspon and drizzled it around the top when finished. I also heated some in the microwave and put in a separate dish in case anyone wanted to drizzle more on theres. Therefore, DO NOT HEAT ALL THE BISCOFF SPREAD IN THE RECIPE.
