- 125 grams brandy (or similar)
- 200 grams dried figs, halved
- 160 grams dried cranberries
- 400 grams dark chocolate
- 90 grams golden syrup
- 200 grams Chocolate Ripple Biscuits
- 140 grams pistachios, shelled and unsalted

Place figs in thermomix bowl and chop on speed 4 for 4 seconds.
Transfer to a microwave safe bowl and combine with cranberries and brandy.
Microwave on HIGH for 2 minutes, then set aside for an hour.
Place the biscuits into clean thermomix bowl and chop speed 7 for 4 seconds. Combine with the fruit mixture.
Place the chocolate into the clean thermomix bowl and chop on speed 8 for 5 seconds.
Melt the chocolate at 50 degrees/speed 2/for 2-5 minutes.
Wait 5 minutes and then slowly mix in the golden syrup with the melted chocolate.
Add pistachios to the fruit mixture and then pour in and combine the melted chocolate.
Wait about 15 minutes until the mixture firms and roll out 5 salamis. Wrap in glad wrap and place in the fridge overnight to set.
Once set roll on sushi matt and then into a mixture of cocoa and icing sugar. Wrap in baking paper and clear cellophane.

This recipe is a real winner! 5 logs of salami! Great for Xmas gifts!
Halved the recipe and missed out the pistachios this time, although I may try it with them next time. Haven't tried a proper slice of it yet but the mixture tasted yum when i was making it. Thanks!
