Ingredients

  • 1 can 395g Sweetened Condensed Milk
  • 1 cup brown sugar
  • 2 tablespoon glucose syrup
  • 125 grams butter (chopped)
  • 180 grams dark chocolate, Broken into pieces
  • 3 level teaspoons Instant powered coffee OR, double shot strong espresso (max 40mls)
  • 1/4 Cup of chopped walnuts
  • cocoa powder

Recipe's preparation

  1. 1. Place broken chocolate into TM for 5 seconds, speed 9. Set Aside. 

    2. Place condensed milk, sugar, syrup, and butter in bowl, cook for 8 minutes at 100C on Speed 3.  

    3. Scrape the sides and bottom of bowl with a spatula. Add coffee. 

    4. Cook for a further 20 minutes at Varoma Temp on speed 3, again with the MC off to ensure the condensation does not drip back onto the fudge. 

    5. Add chopped chocolate into TM, 10 secs on speed 3-4, ensure choc has melted. Repeat if necessary.  

    6. Add chopped walnuts into TM, 10 secs speed 3-4. 

    7. Spoon into a lined 20 x 20cm tin. Smooth top. Set aside for 30 minutes. Cover with plastic wrap. Refrigerate until firm.

    8. Slice into small pieces. Dust with cocoa. Serve.

    Have made this fudge a few times now.  It's so yummy!

    Did you clean and dry your bowl completely before melting the chocolate.  I find chocolate will seize if there is any water in the bowl or on the blades

    This recipe did not work for me - chocolate seized.  Had to throw the whole batch out.
