Ingredients
Pudding
- 215 g Dried Dates, pitted
- 210 g water
- 1 tsp bicarbonate soda
- 190 g brown sugar, lightly packed
- 75 g Butter, softened
- 2 eggs
- 1 tsp vanilla extract
- 230 g Gluten free plain flour, or equivalent to 1 and half cups
Caramel sauce
- 220 g brown sugar, firmly packed
- 60 g Butter, cubed
- 300 g Pouring Cream, can use less for a darker sauce
- 1/2 tsp vanilla extract

Preheat oven to 180˚ C (160˚ for fan forced). Line base and sides of a 20cm square loaf/ slice tin. Set aside.
Place dates into mixing bowl and chop 8 sec/speed 7. Scrape down sides of bowl.
Add water and heat 5 min/90˚/speed 2, then mix 12 sec /speed 4.
Add bicarbonate soda and combine 6 sec / speed 2. Pour mixture into another bowl . Clean the bowl and blade thoroughly and completely dry.
Add butter and brown sugar into bowl and mix 11 sec / speed 4. Scrape down side of bowl , then mix for 1 min/ speed 4. Scrape down sides once more.
With MC off add one egg at a time to the mixture while the blades are still rotating.
Add vanilla, gluten free flour and reserved date mixture and combine 6 sec/ speed 4.
Pour mixture into prepared tin and bake for 35-40 minutes or until golden brown .Check with skewer if cooked through . Allow to sit for 5 minutes before turning onto a wire rack to cool.
Place all the ingredients into mixing bowl and cook 4 min/80˚/speed 4.
* Using 300g cream will give you a light coloured sauce. For a darker sauce use only 200 g cream.
Cut the pudding , pour over sauce and serve.

This is the best sticky date recipe I have used
Amazing texture and taste you would not believe it is gluten free. Whole family loved it. I did reduce the sugar to 140 g for the caramel sauce and it was perfect - sweet enough. Thanks for the recipe.

It sure can ....then you can easily reheat on the stove or in the microwave when you want.
The sauce can be made a few days and keeps very well in the fridge.
Can the sauce be made ahead of time and reheated?
Absolutely delicious. I used a gluten free flour blend from the blog me and my thermie. Needed to cook for a 50 mins in a fan forced oven. Will be making again. Great recipe.
