Ingredients

Base

  • 250 g Digestive biscuits
  • 1/2 lemon, zest only, no white pith
  • 1/2 tsp Vanilla Bean Paste
  • 125 g Butter

Cheesecake Mixture

  • 400 g cream cheese, cubed
  • 400 g Full Cream Condensed Milk (1 tin)
  • 80 g lemon juice
  • 1 tsp Vanilla Bean Paste
  • 200 g Fresh Passionfruit Pulp
  • 1 tbsp room temperature water
  • 2 tsp powdered gelatin
  • 1 tbsp Boiling water
  • Extra Passionfruit Pulp for serving (optional)

Recipe's preparation

    Base
  1. Place biscuits, lemon zest and vanilla bean paste into mixing bowl and crush 7 sec/speed 7. Set aside.

  2. Place butter into mixing bowl and melt 3 min/60˚C/speed 2. Scrape down sides of mixing bowl with spatula.

  3. Add biscuit mixture and mix 10 sec/speed 4.

  4. Divide biscuit mixture between 8 loose bottom quiche pans and press down firmly to cover the bottom and the sides of the pans. Refrigerate for 20 min.  Clean mixing bowl.

  5. Cheesecake Mixture
  6. Place cream cheese, condensed milk, lemon juice and vanilla bean paste in mixing bowl and mix 10 sec/speed 6.

  7. Add passionfruit pulp and mix 10 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 4.

  8. In a small bowl, sprinkle powdered gelatin over 1 tbsp room temperature water and let soak for a minute. Add 1tbsp boiling water and mix until dissolved.

  9. Add gelatin mixture to mixing bowl and mix 10 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 4.

  10. Divide mixture between pans and refrigerate for at least 3 hours.

  11. Carefully remove pans and serve with 1-2 tsp of passionfruit pulp (optional).

Tip

Can be made without the base - divide cheesecake mixture between 10 - 12 ramekins and refrigerate for at least 3 hours.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
