Ingredients

Shortbread

  • 100 g macadamia nuts, unsalted
  • 250 g Butter, cubed
  • 100 g sugar
  • 280 g plain flour
  • 100 g rice
  • 125 g Glacé ginger
  • 1 tablespoon sugar, extra to sprinkle
  • --- icing sugar, to dust

Recipe's preparation

    METHOD
  1. Preheat oven to 150 degrees celsius or 130 degrees celsius fan forced

    Dry roast nuts 5 minutes/90 degrees/Speed 1

    Cool, then chop 3-5 seconds/Speed 7, set aside

    Mill rice 1 minute/ Speed 9, set aside

    Chop ginger 3 seconds/ Speed 5, set aside

    Wash and dry jug

    Mill sugar 3 seconds/ Speed 9

    Add butter, mix 20 seconds/ Speed 5

    Scrape down sides of jug

    Add flours, ginger and macadamias, Knead 35 seconds/ closed lid and wheat symbol TM31/ Interval speed TM5

    Turn onto Thermomat/Oven Mat lined with a piece of non stick baking paper, gather dough together

    Press or roll into a 25cm round

    With dough still on paper lift onto baking tray. Use your fingers to pinch edges of dough to create a fluted effect

    Score dough into small wedges, prick with a fork

    Sprinkle with extra sugar

    Cook, 35 minutes or until firm and pale golden

    Cool on tray, dust with icing sugar, then cut into wedges

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
