Ingredients
Mandarin, Almond & Cardamom Muffins
- 100 g almond meal, or you can mill 100g of raw almonds
- 300 g Mandarins Skin On
- 100 g unsalted butter
- 2 eggs
- 150 g Rapadura Sugar
- 200 g Gluten free self raising flour
- 2 drops Cardamom Essential Oil, or 1/8 tsp of ground cardamom or you can leave out

- 1. Preheat oven to 180 degrees fan forced.
2. Grease a muffin tray or spray with cocnut oil.
3. Add almonds to the bowl and mill for 10-15 seconds Speed 10 set aside or you can just use almond meal and add in step 5
4. Add Mandarins (cut into quarters, skin on, remove as much white pith as you can and no pips) and butter into the mixing bowl and mix for 10 seconds speed 8, scrape down the bowl sides and mix for another 10 seconds speed 8
5. Add remaining ingredients, including almond meal and combine 20 seconds speed 4. If you like a sweeter muffin then add in 100g of caster or raw milled sugar
Cardamom can be left out if you don't have any or you can substitute for cinnamon or nutmeg
6. Bake for 20-25 minutes or until skewer comes out clean this all depends on your type of oven

Tip
Store in an airtight container.
You can also add a nice cream cheese frosting or buttercream icing for that extra sweetness
