Ingredients
Pancake Mix
- 50 grams raw sugar
- 400 grams Self Raising Flour
- 1 teaspoon bicarb soda
- 800 grams Milk, Cows / Rice / Any other
- 20 grams white vinegar
- 2 teaspoons vanilla extract
- 40 grams Butter, Melted
- Coconut Oil for Cooking, Or whatever you choose.

Make Caster Suger if necessary by milling Raw Sugar for 3 seconds/speed 9.
Place all ingredients into Thermomix bowl including melted butter. Mix on speed 5/10seconds. Scrape sides and mix for a further 20 seconds.
Heat a medium non-stick frying pan over medium heat. Lightly brush with coconut oil. Pour 1/4 cup of batter into the pan until pan is full. When top of pancakes bubble, flip over. Remove when cooked and place on a plate with a teatowl on top to wrap over cooked pancakes.
Repeat until all the batter is used.
Tip
Can be re-heated in toaster if not too small.

Great recipe. I used 1/2 GF SR flour and the other half rye flour. I used coconut sugar and added 2 ts baking powder. I used oat milk but only 550 mL. They were nice and thick. Thank you for the recipe!
Tastes ok. I did decrease the sugar though, and used my own gf flour mix. Probably needs gum. Maybe more starch? Very flat pancakes but we were happy to eat the half batch I made. Will keep looking for a different recipe to alternate with our usual.

I made a few changes to make them 'cleaner'.
I used almond milk, ghee and coconut sugar. For the flour I milled white beans and buckwheat then used that with tapioca and almond meal all equal parts with 1 tsp baking powder, 1/4 tsp salt and xanthum gum.
I also halved the recipe and that was plenty for myself and 2 kids

Great recipe though mine was very thick (which I love but a bit too thick for my kids) so I added some additional milk but then they were all sticking and wouldn't cook. Have put half the batter aside to try again tomorrow and see how t goes but next time I won't try thinning this recipe at all. Thanks for sharing this easy egg free recipe.
I made these because i promise pancakes to a special someone for breakfast only to realise we didn't have any eggs. They turned out beautifully.
I did only make a half quanitiy because we didn't need a full batch.

Sensational pancakes! I made these using the Orgran Gluten Free Self raising flour and rice milk. Best pancakes we have had since changing to gluten and dairy free almost 12 months ago. So light and fluffy. Thanks for a great recipe. This one is now my go to recipe for pancakes.
