Ingredients

Makes approx 1 litre / 4 servings

  • 2 cans 432g cans of pineapple chunks / pieces, in their own juice, or use Fresh Pineapple
  • 85 g coconut milk
  • 3 tablespoons raw sugar, you can substitute for any other sugar / sweetener
  • 1.5 tablespoons lemon juice

Recipe's preparation

  1. Drain pineapple and freeze {at least overnight approx 6+ hours}

  2. Once frozen, chop into big chunks small enough for Thermomix

  3. Puree until smooth speed 10

     

  4. Add other ingredients, and blend speed 10 for 30 seconds then lower to speed 7 until smooth. 

    Once smooth and combined, serve immediately

    If it's a particularly hot day, you might have to freeze again before serving

Tip

Use half fresh / half tinned and even freeze reserved juice into ice cubes, mill sugar first, then add in with all ingredients
