Ingredients

BASE

  • 30 grams cacao butter
  • 30 grams coconut oil
  • 150 grams Mixed Nuts, hazelnuts, almonds, walnuts, cashews
  • 2 medjool dates pitted
  • 3 tablespoons Goji Berries
  • 1 1/2 tablespoons Raw Honey

TOP

  • 150 grams raw cashews, soaked & rinsed
  • 1 teaspoon vanilla extract
  • 2 tablespoons cacao powder
  • 6 medjool dates pitted
  • 2 Avocados, flesh only
  • 50 grams cacao butter, Chopped into small chunks

Recipe's preparation

  1. Soak cashews overnight OR soak in boiling water for 2 hours

  2. BASE
  3. 1. Place all ingredients in TM Bowl.

    2. Mix 10 sec / Speed 9

    3. Pour into pie plate and press down to cover the entire base and sides. (if using a cake tin, just press up a 1/4 of the sides

    4. Place in freezer

  4. TOPPING
  5. 1. Rinse soaking cashews and place in TM Bowl

    2. Chop 10 sec / Speed 9

    3. Add vanilla, cacao. dates

    4. Blend 2 mins / speed 9

    Check consistency, should be creamy and smooth, if not blend a further 30 sec on speed 9.

    5. Pour on top of base and place in fridge for at least 1 hour before serving.

Tip

Keep leftovers in fridge until redy to serve .. oh who am I kidding, there won't be any leftovers!!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     We used more cocoa and dates for the top section and topped with blueberries, raspberries and bee pollen!!!! DE-Licious!! 😋😋😋
