Ingredients

BASE

  • 180 grams medjool dates pitted
  • 80 grams Almonds raw, soaked and rinsed
  • 2 tbsp coconut oil
  • 2 tbsp Cashew Butter

FILLING

  • 180 grams medjool dates, pitted
  • 60 grams coconut oil
  • 2 tbsp Cashew Butter
  • 125 ml Maple Syrup, or Rice Malt Syrup
  • 80 ml Almond Milk
  • 1 tbsp ground rock salt, add to taste

TOPPING

  • 25 grams coconut oil
  • 25 grams Maple syrup, or rice malt syrup
  • 30 grams raw cacao powder

Recipe's preparation

  1. Soak almonds overnight, or in boiling water for 2 hours

  2. BASE
  3. 1. Add all ingredients to TM bowl

    2. Chop 10 sec / speed 9

    3. Spread evenly over base of prepared tray and place in freezer

  4. FILLING
  5. 1. Add all ingredients to TM bowl

    2. Blend 10 sec / Speed 9, scrape down sides of bowl

    3. Repeat step 2, twice. 

    It should be a very thick caramel-like consistency.  

    4. Spread over base and placed back in freezer 

  6. TOPPING
  7. 1. Add all ingredients to TM bowl

    2. 3 minutes / temp 60 / Speed 3

    3. Spread quickly over filling (as slice will be cold, this topping will start to set as you are spreading it, so work quickly!)

    4. Place back in freezer for approx an hour or until ready to serve.

Tip

I use a Pyrex 3 cup rectangle tray .. it could be spread out more for a thinner slice, but I like to make it thick and cut the pieces smaller.

The original recipe is Lola Berry's Salted Caramel Slice, I have adjusted a little and converted to TM.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
