This recipe follows the classic Swiss roll. I followed it exactly and found that I had a very thin sponge. Using 37 C is excellent as it brings the eggs to body temperature however I don’t think 4 minutes using the butterfly achieves anywhere near the volume a kenwood does when it beats the eggs and sugar for 5 minutes. I might try it again using self raising flour and beating the mixture for 8 minutes.
