Ingredients
Base
- Cooking oil spray, for greasing
- 380g butternut biscuits
- 60g dark cocoa powder
- 130g unsalted butter
- 1 eggwhite
Filling
- 500g cream cheese
- 100g caster sugar
- 3 eggs
- 40g cornflour
- 1 tsp vanilla extract
- 300g sour cream
- 250g white chocolate
Topping
- 140g milk chocolate
- 70ml pure cream
- Double cream, to serve

1. Preheat oven to 150°C. Grease a 22cm spring form cake tin with cooking oil spray, then line base and side with baking paper. Put biscuits and cocoa in Thermomix and mill on speed 8 for 10 seconds, once done put in to bowl set aside. Add butter and melt for 1minute 15 seconds, speed 4, 50 degrees, once melted add biscuits and eggwhite press turbo button 7 times or until combined.
2. Press biscuit mixture into base and up side of prepared tin. Put in freezer for 10 minutes to firm up.
3. Put white chocolate in Thermomix grate for 10 seconds speed 9, scrape down sides and Melt white chocolate for 2 minutes 30 seconds, speed 3, then Put cream cheese, sugar, eggs, cornflour and vanilla extract in Thermomix and mix 10 seconds speed 6, take lid off scrape down sides and then turbo button 4 times,or until smooth. Add sour cream and mix for 1 minute 30 seconds speed 6.
4. Pour white chocolate mixture into tin. Put tin in a baking dish and fill with water to come halfway up sides of tin. Bake for 1 hour 30 minutes. Remove tin from water bath. Set cheesecake aside in tin to cool completely.
5. Put milk chocolate and cream in Thermomix for 2 minutes 30 seconds,50 degrees, speed 3. Pour into tin and put in fridge to set over night. Release cheesecake from tin, slice and serve with double cream.

Tip
This cake will keep in an airtight container for up to one week. You can also freeze it for up to two months. Just wrap it in plastic wrap, then foil, and don’t forget to label it!
