- 150 g white chocolate, chopped
- 500 g cream
- 200 g sour cream
- 1 tsp vanilla essence

- 1. Add white chocolate and 125ml cream to TM bowl. Cook at 50 degrees, 4 minutes, speed 1.5. If chocolate is not melted then cook for more time as required.
2. Add remaining 375ml cream and the sour cream to the TM bowl. Mix at speed 3 for 10 seconds.
3. Pour into a bowl and place in the fridge until well chilled.
4. Add butterfly to the TM. Pour chilled mixture into the bowl. Whip at speed 3.5 for 1 minute, or until the mixutre can hold it's peaks. You may need to continue whipping for more time depending on your cream.
5. Use as a topping for pavlova, to sandwich mini merignues, to fill cakes or as a decadent alternative to whipped cream for any dessert.
Tip
This has a decadent flavour and is a great alternative to whipped cream in any dessert.
Try replacing the white chocolate with dark chocolate for a chocolate cream.
Try topping a pavlova with lemon or passionfruit curd, the whipped white chocolate cream and fresh raspberries.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Thanks for your comment Noeline - 2 minutes worked for me, but I have now edited the recipe to ensure the mixture doesn't get overwhipped. I believe that cream can vary during the year and this can affect whipping times.
watch it carefully, speed 3.5 For 2 minutes to fast for too long.
