Ingredients
Lemongrass and Ginger Syrup
- 18 grams white sugar
- 23 grams water
- 1/2 teaspoon fresh ginger, grated
- 2 1/2 cm(1 inch) fresh lemon grass, bruised
- 1/2 teaspoon lime juice, freshly squeezed
Mojito
- 10 cm lemongrass, bruised
- 1/2 lime, cut into wedges
- 5 leaves fresh mint
- 3 tbsplemongrass and ginger syrup
- 45 grams white rum
- 125 grams soda water
- ice to serve

- Place 18 grams of white sugar in the mixing bowl
- Add 23 grams of water
- Add 1/2 teaspoon of fresh grated ginger
- Add the bruised lemongrass
"Closed lid" Cook 5 mins / Speed 1
- Add 1/2 teaspoon fresh lime juice
"Closed lid" Mix for 10 secs / Speed 3
- Strain the syrup through a fine sieve and set aside to cool completely
- Clean and dry mixing bowl
- Place 5 mint leaves and wedges of 1/2 limie in the Thermomix bowl
- Pulse for 2-3 seconds on Turbo to crush the mint and lime together, releasing their juices
- Add the white rum, lemongrass and ginger syrup and soda water. Mix 2 secs / speed 4
- Pour into glass filled with ice cubes
- Decorate with the bruised lemongrass stick. Serve immediately and enjoy!
