Spicy Chai Tea

  • 3 cm ginger, stem, /root
  • 3 pods cardamom pods
  • 2 pod star anise
  • 1 sticks cinnamon quill
  • 500 g water
  • 300 g Milk of choice
  • dash Freshly ground black pepper
  • 1 heaped tsp ceylon tea, leaves
  • 3 heaped teaspoons sugar or honey

Recipe's preparation

    Spicy Chai Tea
  1. Place ginger root, cardamom pods, cinnamon stalk, and star anise in the TM bowl, and roughly chop 3 sec/speed 6. Scrape down sides of bowl.
  2. Add the rest of the ingredients, and cook 9 mins/ 80C/ speed3.
  3. Poor immediately, through a fine sieve. Leftovers can be kept overnight in a glass bottle with a lid.

Tip

Any milk of choice can be used. For extra portions, or bigger cups, simply add more water or milk, whichever you prefer.
If you can get your hands on fresh turmeric root, by all means add a 1-2cm piece at the first step, don't forget the black pepper as this helps to absorb the turmeric better for good health.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).     A lovely recipe, thank you. I used half a star anise pod (instead of 2 pods as indicated in the recipe) just because I thought the flavour might be overpowering. I like a really spicy chai so I gave it a good grind of pepper (about 12 turns on my pepper grinder) and that along with the ginger gave a good level of heat. I would use 2 tsp of black tea leaves next time just because the colour of my tea came out a bit weaker than I would usually like.
    Overall I really like this recipe and will definitely use it again.
