Ingredients
Sweet potatoe and leek soup
- 1 tbsp oil, coconut or olive oil
- 1 --- onion, Quartered
- 2 cloves garlic, Peeled
- 1 --- leek, Sliced
- 2 teaspoons ground cumin
- 400 grams kumara, 3 medium sized, or one large one. Or other sweet potatoe
- 1 --- carrot, cut in chunks
- 700 grams water
- 1 tablespoons chicken stock paste
- 40 g cream
- 1/2 tsp salt, To taste
- pepper, ground, To taste
- 1 sprigs fresh coriander, to serve

Add onion and garlic to mixing bowl. Mix 3sec/sp5
Add oil and and cumin powder, and sautee 2mins/100C/sp2
Add leek, kumara, carrot and cut 5sec/sp5
Add water, and chicken stock and cook 20min/100C/sp2
Add cream and cook 2min/98C/sp2
Add salt and pepper to taste and mix 1min/sp4 gradually increasing to 8.
Serve with fresh coriander sprinkled over.
Tip
Easy to adjust to dairy free, exchange cream for coconut cream, or leave out.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
