Ingredients
Chilli Mussels
- 1000 grams mussels, cleaned
- 3 cloves garlic
- 40 grams olive oil
- Half an onion, roughly chopped
- half a red capsicum, deseeded and roughly chopped
- 1 large red chilli
- 50 grams white wine
- 700 grams Tomato Pasata
- 60 grams red wine
- freshly ground white pepper to taste
- Crusty Bread
Tomato Passata
- 4 cloves garlic
- 1 brown onion, Cut in half
- 1500 grams tomatoes ripe
- 2 tablespoons TM Vegetable Stock Concentrate2
- 2 tablespoons raw sugar
- 400 grams water

Put the tomatoes in the varoma dish - you should be able to fit 1.5kgs approx at a time. Add water in mixing bowl. Cook tomatoes 20 mins | Varoma | Spd 2
Remove the varoma and set aside to cool
Save water from TM Bowl and set aside
Peel brown onion, cut in half and add to TM bowl with peeled garlic cloves and basil. chop 1 sec | Spd 7 scrape down sides with spatula. Chop again 1 sec | Spd 7.
Add 50gms olive oil and cook 4.5 mins | Varoma | Spd 2 with the MC off.
Once the tomatoes are cool, peel off the skin off and add to TM bow with 300-400gms of water (Including water saved from cooking tomatoes). Amount of total water added will impact on sauce thickness and volume.
Add 2 tbsp of TM vegetable stock & 2 tbsp sugar.
Cook 45 mins | Varoma | Spd soft. Place basket on top to avoid spitting.
Set aside Passata for later - Place garlic in the bowl chop 6 secs/spd 5.
Add oil and saute 3 mins/Varoma/spd 1.
Add onion, chilli, capsicum and white wine, chop 4 secs/spd 5 and saute 10 mins/Varoma/spd 1
Add tomato passata, red wine and pepper. Place Varoma tray with Mussels in it on top of the Thermomix. Cook 20 mins/Varoma/Speed 1.
Serve with a crusty bread
