Ingredients
Curry
- 1 onion peeled & halved
- 3cm piece fresh ginger
- 1 clove garlic
- 15g olive oil
- 1 red chilli - deseeded and halved
- 25g thai curry paste
- 125g water
- 250 g coconut milk
- 3 kaffir lime leaves
- 120g sweet potato - 2 cm cubes
- Juice of Lemon or Lime
- 15 green beans or snow peas
- small handful baby spinach
- 400g firm fish
- coriander to serve

Place onion, ginger, garlic in the bowl and chop 3 secs/speed 5
Scrape down sides add oil and sauté 3 minutes, 120 Degrees/ speed 1
Add curry paste and cook 5minutes/ 100 Degrees / Speed 1
Add coconut milk and water, lime leaves and juice. Place sweet potato in basket, beans in bottom of Varoma and cubed fish in the top layer.
Cook for 15 minutes at Varoma stpeed 3 reverse
Check fish at ten minutes and if cooked remove and place in thermoserver. Depending on the thickness of the fish it may need further steaming.
When the sweet potato and beans are cooked remove fromThermomix and place in Thermoserver along with handful of baby spinach.
Pour over sauce removing kaffir lime leaves.
Serve garnished with coriander.

This was lovely. I used red Thai curry and pink snapper. Served it on a bed of rice and used cabbage instead of snow peas. Will definitely make again. Thank you.
