Smoked Snapper In Puff Pastry Parcels
- 50g Butter, Diced into Cubes
- 50g plain flour
- 300g Milk
- 70g Cheddar cheese, Cut into 2cm cubes
- 6g mustard powder
- 70g chopped parsley
- 400g Smoked Snapper, Or any smoked white fish
- 1 egg yolk
- 5 Sheets Puff Pastry
- 1 egg, For egg wash on pastry
- 1 level tsp cold water, For egg wash on pastry

- Preheat oven to 200 degrees, fan force.
Add cheese cubes to bowl, "Slow Cooking" 10 seconds on "Blend" speed 8
Transfer grated cheese to a bowl and set aside, no need rinse bowl
Add butter cubes the Thermomix bowl, melt "Slow Cooking" 2 minutes, "Sous-vide" 90 degrees, "Blend" speed 3
Once melted add flour, "Slow Cooking" 2 minutes, "Sous-vide" 100 degrees, "Blend" speed 3
Pour 1/2 the milk into the bowl, "Slow Cooking" 1 minute, "Blend" speed 5. Ensure its smooth, if not extend time until smooth.
Add remaining milk into the bowl, "Blend" speed 7 until completly smooth
"Slow Cooking" 8 minutes, "Sous-vide" 110 degrees, "Blend" speed 2. Until mixture is thick, extend time until thick
Add grated cheese, parsley, mustard powder, egg yolk, "Slow Cooking" 1 minute, "Blend" speed 5
Combine smoked fish and cream sauce into a large bowl, gentlely fold to combine
Take large sheet of puff pastry, add 5 heaped tablespoons of smoked fish mixture into centre of the sheet. Fold in half. Push down the edges and press with a fork.
Continue this making 4 - 5 parcels, put on a non stick oven tray.
Mix egg and water into a small bowl to make the egg wash, brush onto the parcels. Add a fork prick into centre of each parcel.
Place into oven, and bake for 15 - 20 minutes until golden and puffed.
Tip
Any white smoked fish can be used for this recipie.
If you dont have puff pastry, surve on toast, and grill in the oven for 2 minutes
