Ingredients

  • 100 g Parmesan cheese
  • 3 cloves garlic
  • 1 red onion
  • 60 g Butter
  • 60 g olive oil
  • 400 g Aborio Rice
  • 500 g skinless chicken thigh fillets
  • 1 1/2 tbsp Vegetable stock paste
  • 1 1/2 tsp chicken stock paste
  • 1 l water
  • 2 tomatoes, diced
  • 4 sprigs basil, leaves torn into little pieces

Recipe's preparation

  1. Place Parmesan cheese into mixing bowl and grate 10 sec/speed 10.

    Transfer into a bowl and set aside into ThermoServer. Clean and dry mixing bowl.

     

  2. Place garlic and red onion into mixing bowl and chop 3 sec/speed 5.  Scrap down sides of mixing bowl with spatula.

     

  3. Add butter and extra virgin olive oil and saute 5 min/120C/speed 1.

     

  4. Insert butterfly whisk. Add Aborio Rice and saute 3 min/120c/Counter-clockwise operation"Counter-clockwise operation" /speed 1.5, without measuring cup.

     

  5. Add vegetable and chicken stock paste, chicken and water. Cook 16 min/100C/Counter-clockwise operation"Counter-clockwise operation" /speed 1.5, placing simmering basket instead of measuring cup onto mixcing bowl lid.

     

  6. Meanwhile dice tomatoes and shred basil leaves and place with parmesan cheese into ThermoServer.

     

  7. Transfer into ThermoServer. Using the spatula, combine with resereved Parmesan, tomatoes and basil leaves.

     

Tip

This recipe will also work find in the TM31. Just saute on Varoma instead of 120C.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
