Ingredients

Satay marinate

  • 1 tsp coriander seeds
  • 1 tsp fennel seeds
  • 2 tablespoons cumin seeds, (can be replaced with powder)
  • 8 stalks lemongrass, chopped
  • 30 g red onion, 1
  • 40 g garlic, about 10 medium size garlic clove
  • 20 g galangal
  • 20 g ginger
  • 10 g Fresh Turmeric, (can be replaced with half tsp powder)
  • 50 g brown sugar, and some palm sugar
  • 1 tsp salt
  • 25 g honey
  • 500 g chicken fillet, or beef

Peanut sauce

  • 80 g red onion
  • 30 g garlic
  • 10 g ginger
  • 10 g galangal
  • 2 stalks lemongrass
  • 3 tbsp Chilli Paste
  • 10 g dried shrimp, soaked
  • 400 g roasted peanut, coarsed ground
  • 20 g Palm sugar or brown sugar
  • 1 tbsp salt
  • 1 tsp tamarind paste

Recipe's preparation

    Satay Marinate
  1. Dry roast corriander seeds, fennel seeds, and cumin seed for 2 mins/120/sp 1.
  2. Mill for 1 minute / speed 10.
  3. Add all the other ingredients (except chicken). Blend 20 sec/sp 7. repeat if necessary.
  4. marinate the chicken (for atleast 6 hours).
  5. Put on skewers. cook on bbq or better yet with charcoal. use 1 stalk of lemongrass + oil + marinate sauce sparringly throughout the cooking.
    Ready to be served with the peanut sauce and cube rice.
  6. Peanut sauce
  7. Blend onion, garlic, ginger, galangal and shrimp paste. 20 sec/sp 7. repeat if necessary.
  8. Add 100 gram cooking oil. Sautee for 10 minutes/ 120C/ rev sp 1.
    Scrape the bottom and repeat the step 10 minutes/ 120C/ rev sp 1
  9. add the ground peanut and water (adjust according to preference)
  10. Cook for 10 mins/100C/sp 1, prolong if necessary (until most of the oil surface)
  11. add the remaining seasonings. Continue cooking for 10 mins/100C/sp 1
