Ingredients

Curry

  • 1 onion, cut into wedges / large chunks
  • 1 tablespoon peanut / coconut / vegetable oil
  • 1 can Coconut milk 400ml
  • 2 tablespoons red curry paste, BC cookbook p68 / ED cookbook p38
  • 1-2 tablespoons vegetable stock paste TM
  • 1 tablespoon Thai fish sauce (Nam Pla)
  • 1 tablespoon sugar, (I use coconut sugar)
  • 250 grams butternut squash / pumpkin, cut into small (2 cm) cubes
  • 500 grams chicken breast / thigh fillets, cut into small (2 cm) cubes
  • 1 tablespoon lime juice
  • 1 piece long red chilli pepper, seeded and finely sliced (optional)
  • 1-2 drops essential oils: lime, lemongrass, ginger, cilantro (coriander leaf), must be food grade or above

Recipe's preparation

  1. Heat oil in bowl - 2 mins / Varoma / Speed 1

  2. Stir fry onion in oil until soft – 3 mins / Varoma / Speed 1

  3. Add coconut milk and bring to boil - 2 mins / Varoma / Speed 1    

  4. Stir in curry paste, stock paste plus fish sauce and sugar

  5. Cook - 2 mins / 100° / speed 1    

  6. Add pumpkin / butternut and chicken (and sliced red chilli if using)     

  7. Cook - 8-10 mins / 100° / Counter-clockwise operation"Counter-clockwise operation" / speed 1

  8. Pour into ThermoServer and stir in lime juice and essential oils    

Tip

You can replace the pumpkin with new potatoes – cook potatoes for 8 mins before adding chicken. You can replace the chicken with salmon fillets (skinned and cubed) and peeled raw prawns – cook pumpkin for 5 mins before adding salmon and prawns.

For a one-pot meal, stir through some chopped bok-choy or baby spinach leaves in the last minute of cooking

    This was different and very nice. The chicken to veggie ratio was high so we had some carrot and broccoli as well but all in all the flavours went well together.
