Ingredients

Pancakes

  • 100 g whole buckwheat
  • 100 g basmati rice, or any GF flour
  • 1 Granny Smith Apple, cored
  • 1 large egg
  • 400 g Any kind of Milk
  • 1 tsp baking powder
  • 1/2 tsp Spice, herb or flavour, optinal
  • fat or oil, for frying

Recipe's preparation

    Prepare Batter
  1. Mill buckwheat and rice, if using, with mc on for 1 min speed 8.

  2. Add flour if using instead of rice. 

  3. Add baking powder, flavour if using, apple and egg, mix with mc on 15 secs speek 5. Scrape down the sides.

  4. Add milk and mix 30 secs speed 4. Check that all ingredients are fully incorporated, repeat until combined.

  5. Cook Pancakes
  6. Heat a fry pan to a medium heat.

  7. Melt a small amount of fat / oil to lightly cover base of pan.

  8. When oil/fat begins to bubble the pan is ready for batter. Spoon batter onto pan to desired size. When bubbles appear in centre of pancake and remain, pancake is ready to flip.

  9. Flip pancakes and wait a couple of minutes until browned. Then remove pancakes and place them in thermoserver while you continue to cook the rest of the pancakes.

  10. Serving Ideas
  11. This recipe is suitable for sweet or savoury pancakes or crepes. Some great toppings are: Honey, Golden syrup, Maple syrup, Sugar and Lemon, Icecream, Chopped Fruit, Stewed Fruit, Strawberries stewed with a dash of Cointreau. Any savoury topping such as chicken, ham, mushroom, chopped roasted veges...the variations are endless.

Tip

Use your thermoserver to serve at the table!

Flavours you can add:

Sweet: cinnamon, nutmeg, fruit powders

Savoury: cumin, coriander, tumeric, sumac, paprika, dill, taragon

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    Amazing flavour. I used soy milk (some regular and some sugar-free; just what I had at home). Used a red apple instead of granny smith (what I had) and the colour was lovely in the pancake. I like the slight crispiness the apple gives to the texture.

    I had to be patient with turning the pancake. Like most GF pancakes I've tried, these fall apart if turned too soon (I probably had more success with keeping these together than with other recipes)
