Ingredients
Risotto
- 1 brown onion
- 2 cloves garlic
- 40 g coconut oil
- 200 g Buckwheat groats
- 200 g mushrooms, sliced
- 100 g green beans, sliced diagonally
- 550 g water
- 1 tablespoon stock paste
- handful shredded kale, (optional)

1. Peel garlic, peel & halve onion and put both in TM bowl - chop 3sec/sp7.
2. Add coconut oil - saute 3min/Varoma/sp1
3. Add buckwheat groats (grains) - cook 1min/100C/"Counter-clockwise operation" /sp1.5
4. Add mushrooms, beans, water & stockpaste. Give the whole lot a stir a couple of times around, scraping the bottom with your spatula. Cook 20min/100C/"Counter-clockwise operation" /sp1.5
5. Add kale, mix through with spatula. Let the risotto rest for 5mins in Thermoserver (or TM bowl) until you are happy with the consistancy.
Tip
You can change the vegetables in here for whatever you like - pumpkin/peas/corn etc. And meat can also be added if you like - saute bacon with onion for example.

Added celery at the beginning, mixed herbs and stirred in some crumbled parmesan at the end.
Will probably substitute some of the water for wine next time.
I was unable to "saute 3min/Varoma/sp13", as I don't seem to have a speed 13. I'm a newbie, so just guessed and put the speed on 1. It worked out great, even my fussing 9 year old liked it!
Made this and think it is amazing! Had no beans, but used broccoli florets and some frozen peas and corn. I also stirred through some shreded roast chicken.
Pseudo-Grain (buckwheat which is not wheat, aramanth and quinoa) is a grain subsitute in the Paleo diet as far as I am aware....so yes is Paleo.....to my knowledge
This paleo....just cause buckwheat has the word wheat in it doesn't imply it is a wheat grain. Tricky!!

I really enjoyed this recipe. I also was worried about lack of flavour, so I added a small handful of fresh thyme, a pinch of dried marjoram and substituted 80g of the water for 80g of white wine... it was devine! I also added less mushrooms and more beans as I'm only just getting into the shrooms... lovely recipe - thank you!
This had a great texture but needs more seasoning for me. I'll definitely make it again once I decide what seasoning to add.
