I'm cooking this todayRecipe's preparation
Cook rice as outlined in Thermomix book. It makes loads so there is usually some left over after a meal. The next day scour the fridge for other leftovers such as roast veg, meat, veges, baked beans, cooked pulses, quinoa, cheese (but only a small amount or it goes too melty), anything as long as it hasn’t been hanging around for too long. If you are an organised sort of person you could freeze small amounts of leftovers until you have enough.
Pop whatever rice you have into the Thermomix , add the leftovers so that you have about half the bulk of the rice. Add some seasoning that your kids will eat, maybe tomato sauce or if you are lucky some soy or something more spicy. Mine will only eat tomato sauce. For extra goodness that they don’t know they are getting, you could bang in half a tsp of kelp powder. Grind it all together for 5-10 seconds on speed 9. You may have to wipe down the sides. Test it for stickability and if too gloopy add some breadcrumbs or bread and just grind some more. If too dry pop a bit of water or olive oil in.
Shape into ovals about half the size of a hens egg, roll in breadcrumbs or finely ground oats and shallow fry so they look like falafel or small reindeer droppings (that may go down better with the kids). They are bite sized, tasty and use up leftovers.
