Ingredients

  • 450 g glutinous rice
  • 6-8 shitake mushroom, dried
  • 50 g dried shrimp
  • 1 garlic clove
  • 3 Chinese sausages, sliced
  • 70 g soy sauce, or to taste
  • 5 g sugar
  • 10 g vegetable oil
  • spring onion, to garnish

Recipe's preparation

  1. 1. Put glutinous rice into thermoserver (or bowl) and add cold water till all rice is submerged. Leave to soak overnight.

    2. Drain rice using varoma

    3. Soak shitake mushrooms in hot water in one bowl and dried shrimp in another for about 10 minutes. Discard water, making sure to squeeze out all water from the mushrooms. Slice mushrooms into thin strips.

    4. Put garlic, shrimps and oil into mixing bowl. Chop 8 sec, speed 4

    5. Add in chinese sausage and saute for 2 min/Varoma/Reverse/Speed 2

    6. Add in shitake mushrooms, rice and soy sauce and saute for 2 min/Varoma/Reverse/Speed 2

    7. Transfer rice mixture to Varoma, creating a well in the centre for the steam to pass through. Place approximately 1L of water into the mixing bowl and set up the Varoma on top. Steam for 20min/Varoma/Speed 1.

    8. Give the rice a mix to ensure even cooking, then steam for a further 10-15min/Varoma/Speed 1.

    9. Mix the rice, transfer to serving bowls and garnish with spring onion.

May add sesame oil for extra flavour
