Ingredients
For Chutney
- 225 g cooking apples, peeled, cored and quartered
- 250 g red onion, peeled and quartered
- 10 g fresh ginger, peeled
- 1 clove garlic, skinned
- 1000 g carrots, peeled and cut into pieces
- 110 g sultanas
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 250 g apple cider vinegar
- 220 g brown sugar

Place apple, onion, garlic and ginger into TM bowl and chop 3 sec/speed 5. Remove from TM bowl and set aside.
Place carrots into TM bowl and chop 5 sec/speed 5.
Add apple and onion mix, sultanas, salt, cayenne pepper and 100ml of the vinegar to TM bowl and incorporate 4 sec/reverse/speed 3.
Cook 1 hour /100⁰C/soft speed until vegetables and fruit are soft. Scrape down sides of mixing bowl with spatula.
Add sugar and remaining vinegar and cook 1 hour /100⁰C/soft speed.
Spoon into warm, sterilised jars and seal immediately. Once cool will keep in fridge for around 6 months.
Tip
This is a great recipe to make when you see carrots on sale cheap.
Delicious to have with cheese and crackers or in cold meat sandwiches.
