- 1 litre water, Chilled
Flavouring
- 2 clove garlic
- 5 sprig basil, Fresh
- 75 g sundried tomato
- 150 g Grapeseed Oil

Add 600g of Thickened Cream to Thermomix bowl, add butterfly and mix speed 4 for 1-4 minutes, Butter and Buttermilk will seperate, if the cream is close to the useby date this will only take 1 and 1/2 minutes, You can tell when cream is ready as the Measuring cup will start "dancing". Do not leave the Thermomix's side as it will start to bounce.
Remove Butterfly and insert thermomix basket to drain the buttermilk. This buttermilk can be kept for scones, banana bread etc. Add 500ml of chilled water to butter solids and mix on speed 4 for 5-10 seconds,
Again drain liquids through basket and discard. Add another 500ml of chilled water and repeat step 3
Again drain liquids through basket and discard. Repeat step 3
Again drain liquids through basket and discard. Squeeze out excess water from butter solics with spatula, set butter solids aside.
Add 2 Garlic cloves and 5 sprigs of basil to thermomix bowl and chop 4 sec/speed 7.
Add 75g sundried tomatoes, chop 5 sec/speed7.
Add butter solids and 150g Grapeseed oil (adjust to taste) mix 20sec/speed 4. Pour into container and put in fridge to set. The mix will seem quite sloppy but will harden in fridge to be spreadable.
