Ingredients
Green Goddess Dressing
- 6 sprigs fresh flat-leaf parsley, leaves only
- 4 sprigs basil
- 2 spring onions, white and green parts
- 2 anchovies
- 280 grams yoghurt
- half --- lemon, freshly squeezed
- 2 tablespoons EVOO (extra virgin olive oil)
- 1 Avocado, flesh only
- 125 grams sour cream
- 1 clove garlic

Place parsley, basil, garlic, spring onion and anchovies into TM "Closed lid" and chop for 5 sec/speed 9.
Scrape down sides of bowl and add yoghurt, lemon juice, EVOO, avocado and sour cream. Blend for 20 sec/ speed 6.
Season to taste with sea salt and/or an extra squeeze of lemon juice if desired.

Tip
This dressing is smooth and bright and pairs well with green, leafy salads.
It is also extremely lovely drizzled over grilled chicken or prawns.
To serve as a dip with vegetables, add an additional 125g of sour cream to thicken. If a thinner dressing is required, add up to 50g of water to step 2.

To make the dressing last longer in the fridge. Leave out the avocado. I added the garlic, one anchovy instead of two, and some sprigs of fresh dill and cottage cheese (instead of avocado), to step 1.

I made this for as a dressing for a green salad. It looked good (smooth and green) however it was fairly bland tasting yet also a bit too lemony. I'll try again. Thanks for the recipe.

Yes that's correct - unfortunately when I added the garlic to the ingredients list, the program wouldn't let me place it in order with the first step ingredients. Unfortunately the garlic has ended up placed last on the list, yet it is an essential ingredient for step 1! Apologies if it has confused you - if I was more tech-savvy I would have fixed it in the first place, but no it wasn't going to budge position no matter how hard I tried!
