Rosi's carrot dip with olive oil

  • 100 g onion, peeled, halved
  • 2 garlic cloves, peeled
  • 70 g olive oil
  • 500 g carrots, roughly choppped
  • 100 g water
  • 1 teaspoon salt
  • 1 cube vegetable stock
  • 1 pinch sugar
  • 1 pinch cayenne pepper
  • 80 g thick Greek yogurt

Recipe's preparation

  1. Place onion & garlic into mixing bowl & chop 3 sec/speed 5.
  2. Add 20g olive oil & saute 3 min/Varoma/speed 1.
  3. Add carrots & chop 5 sec/speed 5.
  4. Add water, 50 g olive oil, all spices & cook 17 min/Varoma/speed 1 without MC. Replace MC then puree 10 sec/speed 6.
  5. Add yogurt & mix 5 sec/speed 3.

    Yummmo! I'm going to make this again and again! I used 1 teaspoon of veg stock paste with no extra salt and sugar. As is, it's great! I'm also interested to trying it without yogurt for a vegan version. Thanks for this gem!

    Rosi's carrot dip with olive oil - Delicious and easy! This was a real hit at my work bring a plate to share lunch today, I served with celery and baby cucumber sticks and sliced homemade wraps. I used 1 teaspoon of vegetable stock paste instead of the salt and stock cube. I didn't add sugar. Will definitely make again. Five stars, thanks for sharing!
