Jan’s Curry Rice
- 1000 grams water
- 350 gram long grain rice, or jasmine
- 1 1/2 level tsp salt
- 20 grams olive oil
- 1 1/2 Cup sultanas
- 1 1/2 Cup Roasted peanuts
- 1/4 cup olive oil
- 1/2 cup white vinegar
- 2 level tbsp sugar
- 1.5 tbsp curry powder

- Place 1000gms water in TM Bowl
Add 1.5 tsp salt and 20g olive oil
Then put simmering basket in the TM bowl.
Add 350gms long grain or jasmine rice
Cook 20 mins/ 100/ speed 4
When cooked, remove simmering basket with spatula and put rice in large bowl to cool. - In a jar mix 1/4 cup oil, 1/2 cup white vinegar, 2 Tablespoons sugar, 1.5 Tablespoon curry powder. Put lid on and shake.
Then mix into the cooked rice in the large bowl. - Once rice cooled add 1.5 cups roasted peanuts and 1.5 cups sultanas.
Serve cool.

Tip
you can add chopped celery as well if you wish. this is a recipe handed down from grandmother, to mother in law to me. ive adapted for thermomix.
