Sweet Potato, Leek and Bacon Soup
- 2 garlic cloves
- 1/2 brown onion
- 130 g leek, roughly chopped
- 8 slices Rindless Shortbut bacon, roughly chopped
- 30 g Butter
- 380 g sweet potato, roughly chopped
- 380 g water
- 1 heaped tablespoon veggie stock paste
- 100 g sour cream
- Cracked Pepper to taste
- salt to taste

- Add garlic, onion, leek and bacon to TM bowl. Chop for 5 seconds / speed 5. Scrape down sides of bowl with spatula.
**Dont worry if the bacon isn't chopped enough, it will be pureed later on. - Add butter and saute for 5 minutes / 100C / speed 1 / MC off.
- Add sweet potato and cook for 5 minutes / 100C / speed 1.
- Add water and stock and cook for 16 minutes / 100C / speed 2.
- Puree for 45 seconds / speed 8.
- Add sour cream, salt and pepper and cook for 1 1/2 minutes / 100C / speed 1.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. This was a tasty soup, only negative was it said four serves, maybe entree size, but need to increase quantities for more than three dinner sized serves.
