Ingredients
Soup
- 1 litre coconut milk
- 10 leaves Kaffir Lime
- 5 slices galangal, peeled
- 2 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 teaspoon palm sugar
- 2 tablespoon lemongrass
- 1 teaspoon Chilli Paste with Soya Bean Oil
- 200 gram chick thigh fillets, Cut into pieces
- 100 gram mushrooms, roughly chopped
- 2 tablespoon chicken stock paste
- Optional - sliced red capsicum
- Optional - sliced baby corn
- Optional - bean shoots

Place all ingredients except chilcken and mushrooms in TM bowl
Cook for 5 mins at 100 deg speed 1
Place basket in TM bowl and place chicken and mushrooms in the basket and cook for 9 mins at 90 deg speed 1
Optional - after 5 mins you can add sliced baby corn, bean shoots or red capsicum - not traditional but adds some extra vegetables
For serving remove the kaffir lime leaves and the galangal Garnish with coriander, mint or basil
Tip
Can be served on it's own as a soup or can be served over steamed Jasmine rice
