Ingredients
Soup
- 4 artichoke hearts in brine
- 4 eschalots, trimmed and peeled (100g)
- 40 g Butter
- 1000 g water
- 2 tbsp Vegetable stock paste
- 500 g Jerusalem artichokes, scrubbed, trimmed, but unpeeled, cut into pieces
- 1 leek, white part only, sliced (120g)
- 50 g pouring cream, plus extra for garnish
- 4-6 slices toasted buttered Ciabatta

1. Drain artichoke hearts and place into mixing bowl. Chop 2 sec/speed 3. Remove and set aside.
2. Place eschalots into mixing bowl and chop 8 sec/speed 5. Scrape down sides of mixing bowl with spatula.
3. Add butter and saute 3 min/Varoma/speed 1.
4. Add water and vegetable stock paste, insert simmering basket and weigh Jerusalem artichokes and leek into it.
5. Cook for 25-30 min/100ºC/speed 1, or until you can pierce the artichoke with a skewer with no resistance.
6. Remove simmering basket with aid of spatula.
7. Add Jerusalem artichokes, leek and cream into mixing bowl and puree 1 min/speed 5-9, increasing speed gradually.
8. Ladle into soup bowls or mugs.
9. Garnish with the reserved artichoke hearts, a little cream and freshly ground black pepper, and serve with a slice of toasted Ciabatta.
Tip
You could use other root vegetables, such as celeriac or sweet potatoes, if Jerusalem artichokes aren't available.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
