Ingredients

Soup

  • 2 level tsp peanut oil
  • 1 large red onion
  • 1 fresh red chilli, to taste
  • 1 cup of diced butternut pumpkin
  • 3 cups of water
  • 1 cup of cloudy apple juice
  • 1/2 Ripe banana
  • 1/2 cup of cooked chickpeas
  • 1 level tablespoon white miso paste
  • 2 level tablespoons toasted unsalted peanuts
  • 1 heaped tablespoon crunchy peanut butter
  • 1 level teaspoon lemon juice
  • 2 level tablespoons Chopped chives
  • 4 garlic cloves

Recipe's preparation

    Method:
  1. Dry roast peanuts at Varoma temperature, counter-clockwise operationGentle stir setting for 5 minutes. Then grind them speed 8-9, 3-4 seconds and set aside.


    Place garlic, onion and chilli in TM bowl and chop for 3 seconds, speed 9. Add oil and saute 2 minutes, 100 degrees, speed 1. Add the chopped butternut pumpkin and add the water and juice. Cook for 15 minutes, 90 degrees, speed 1. Allow to cool for 10 minutes, then add banana and miso.


    Liquidixe for 30 seconds, slowly going from speed 1 to speed 8. Now add the chickpeas, lemon juice, peanuts and peanut butter. Cook for 6 minutes, 90 degrees, reverse and soft spped. 


    Dish up in soup bowls and decorate with chopped chives.
