Ingredients
Marinating sauce
- 2 tbsp Char Siu Sauce1
- 1/2 tbsp light soy sauce
- 1 tsp dark soy sauce
Filling
- 500 grams Pork Belly
- 1 cube ginger, Chopped
- 2 tbsp shallots, Finley chopped
- 2 tsp sesame oil
- 1 tbsp warm water
Dough
- 300 grams all purpose flour, Sifted
- 2 1/2 tsp instant yeast
- 1 1/2 tbsp sugar
- 150 grams water, May require a little more depending on dough

- 1. Get a large bowl; mix all the ingredients for marinade sauce together. Put the marinade on to pork and massage. Cover the bowl and put into refrigerator for at least 4 hours. Place the pork on a baking tray preheat the oven to 200 degree's and Roast for 30 minutes. Turn over once during the process.
- 2. Place all filling ingredients besides the cooked pork belly in Thermomix bowl and chop on speed 4-6 for 30 sec.
- 3. Place cooled Pork belly and juices into thermomix bowl along with all the filling ingredince speed 4 for 1min or until pork belly is roughly chopped into small bits Set aside.
- 4. For the dough: Put water in Thermomix and set the temperature to 35 °C and melt the sugar in the water for 2min or until dissolved and up to temperature then Mix the in. Mix well and set aside for around 5 minutes. If you do not want sugar, just skip it.
- 5. After five min. Add in sifted flour and set on dough mode for 2 min or until fully combined and starting to resemble dough. Allow to stand in bowl for 1hour or until it has doubled in size.
- 6. After 1 hour remove from mixing bowl onto a floured surface and punch out air.
- 7. Then shape the dough into a long log around 5 cm in diameter and then cut the long log into 10 equal portions. Take one portion out, press it slightly and then roll out to a round disc shape using rolling pin.
- 8. Place around 1 tablespoon of the filling in the center of the wrapper and seal the bun completely.
- 9. Place bun on squares of baking paper.
- 10. Fill the Thermomix with hot water and place on "Counter-clockwise operation" speed 3 and set temperature to Varoma.
- 11. Place buns to steam for 15min
- 12. Beautiful on their own or Serve with soy or chilly sauce. Hope you enjoy!!!

A lot of my sauce burnt/caramalised onto my baking pan while in the oven, meaning the filling was quite dry.
Step 4 it says mix in the In?? I'm assuming that's the I stand yeast?
These were great, but my dough was a bit dense. Not sure if I over worked it in the thermi? Will definately try again though!
