Ingredients
Caramelized Apples
- 4 granny smith apples, peeled,cored and quartered
- 50g brown sugar
- 40g Salted butter
20 Second Yoghurt Cake Batter
- 165 g raw sugar
- 1 lemon zest, grated
- 1 tbsp lemon juice
- 2 eggs
- 180 g yoghurt, Natural or Vanilla
- 130 g vegetable oil
- 1 tsp vanilla essense
- 275 g plain flour
- 1 1/2 tsp baking powder
- 1 tsp bicarb soda

Slice each quarter of apple into about 3 or 4 even slices.
Put all the ingredients in the TM bowl and cook for 12 min at 110C reverse soft stir (spoon) without the MC on.
Pour the caramelized apples into a 20cm spring form greased cake tin and spread evenly to cover the bottom.
Put all the batter ingredients into the TM bowl (if you have made the caramelised apples, you dont even need to wash the bowl, extra flavour!) and blend for 20 seconds/speed 5.
Check that the mix is well combined (scape the bowl and mix a few extra seconds if not) and pour into the prepared tin on top of the apples (if used).
Bake at 170C for 40-45 minutes or until a skewer inserted in the middle comes out dry.
Enjoy with vanilla ice cream, Sour cream or a dollop of creamy yoghurt.

This is such an easy and versatile cake, you can really make it whatever you want!
Adding fruit to this cake is an option, it is traditionally eaten just as is for "gouter" (afternoon tea) in France and really popular with kids. My little 6yo can indeed do it all by herself
You can also be creative and seasonal when adding fruits. pineapple, pear, peach, mango, prunes, plums, raspberries, cherries are all great combination with this cake.
You may also want to substitute lemon rind/juice with Orange, and why not add some chocolate chips for a Jaffa twist.

My new favourite cake! Delicious and moist. Can't wait to share with my family. Our Granny Smith apples were on the small side, and I was tempted to add another because of this but decided not to. I'm glad I didn't as this amount caramelised beautifully. Followed the recipe exactly (with exception of an extra 10 min in oven). Thank you for sharing

Luuuvly Recipe. I put pineapple,dates and banana with my stewed apple. Total amount of fruit 600grm. When I put fruit in large springform tin, I sprinkled ground linseed and desiccated coconut on top to absorb the liquid. I used SR.flour and omitted baking powder. I substituted 50grm of flour with custard powder. I substituted vegetable oil for melted coconut oil. Pinch of salt. I only used 90grm sugar 😋💝
Yummy/ Made with apple and put it on the top. Lovely flavour and not soggy. (only used about 90 grams sugar)

Beautiful recipe. Notes; I use Greek Yoghurt and Omitted the lemon. I made 24 Muffins and cooked for 20 minutes (rotating at halfway) with no muffin liners, just bit of cooking spray.
I popped a one out while still warm, scooped any apple that fell out and just piled on. (Pictured)
A good moist cake. I gave it 4 stars as the apple was not caramelized. It was kind of soggy and you had to hold it together. The flavour was good. Maybe if you laid the apple and etc on top of the cake? Everyone enjoyed it. It made one cake in a springform pan as specified and cooked in the time.

Great recipe and a hit with everyone who ate it! The flavours were subtle, nothing too dominant i.e the lemon or the yoghurt. The caramelised apple was lovely!! I'd probably slice the apple into wedges next time rather than chunks as I did but it didn't affect the taste. Thanks for this great recipe!
This is the best cake recipe ever!! Love the convenience of throwing everything in. No fuss but amazing taste!!
i added some fresh mangos in the cake tin and pourd batter on top. The mango added a nice texture to the cake.
