Ingredients

Almond and Strawberry Friands

  • 120 g almonds, (with skins is fine)
  • 240 g raw sugar
  • 180g Butter
  • 6 egg whites
  • 75 g plain flour
  • 1 teaspoon almond essence (optional)
  • 100 g strawberries, sliced

Recipe's preparation

    Almond and Strawberry Friands
  1.  

    Preheat oven to 200 degrees c.  Grease a 12 hole friand tray (use muffin tin if you do not have friand tin)

     

    Place almonds in bowl and mill on speed 8 for 10 seconds. Set aside

     

    Place sugar in bowl and mill on speed 9 for 4 seconds, Set aside with almonds

     

    Add butter and melt for 2 minutes at 90 degree on speed 1

     

    Add egg whites, sugar, almonds and flour and mix for 5 seconds on speed 5.  If you like quite an almondy flavor then add almond essence here too

     

    Divide batter between the friand tins 

     

    Top each friand with sliced strawberries

     

    Bake for 25 mins

     

    Remove from oven and allow to cool for 5 mins before placing on a cooling rack

    These were tasty, mine were delicious in flavour but may have overlooked them as had a eggy taste, did in muffin tins as have no friands tin Will try again

    This is my go to friand recipe and have made it so many times! It is so easy to make and have used different fruits depending on what I have and what is in season. I’ve tried raspberries and also blueberries and both turned out beautifully! Thanks for sharing.

    Delicious and simple, I used vanilla essence in place of the almond essence and frozen raspberries instead of the strawberries.  What a lovely way to use up those leftover egg whites.  Thank you.

    Yum! I made these with gluten free flour and it worked fine. I was a bit worried about how runny the batter was but they're great! Definitely go with the strawberry on top.
