Ingredients
Dough
- 125 g wholemeal flour
- 40 g plain flour
- 25 g wheat bran
- 1/2 tsp baking powder
- 1/4 tsp Bi-carb soda
- 1/4 tsp cream of tartar
- 50 g brown sugar
- 10 g Copha, (or prefered shortening)
- 80 g Butter
- 30 g cream
- 30 g Milk
- 1/2 tsp vanilla essence

Pre-heat oven to 175 degrees. Line 2 baking trays with grease proof paper.
Add flours, wheat bran, bi-carb, baking powder and cream of tartar to TMX bowl and mix sp6/3secs.
Add sugar and mix sp6/5secs.
Add milk, cream and vanilla to MC and mix with a small spoon. Add mixture to TMX bowl and mix s6/5secs to resemble soft playdough.
Roll out dough between 2 pieces of greaseproof paper to approx 3-4mm thick. If dough is difficult to work with roll out and put in fridge for 10-20mins to firm up. This will make it easier to cut into your desired shape.
Bake in ove for 15-18mins or until lightly golden. Adjust the baking time to dry the biscuits out more if they are too soft and fluffy.
Allow to cool on a wire rack.
Store in an airtight continer.

Tip
If you are wanting chocolate digestive biscuits. Melt your desired chocolate and cover one side of your cooled biscuit with desired chocolate. Allow to set and then store in airtight container.
When adding copha break it up into small flakes instead of one cube. This will make it easier to mix into the crumb and will prevent chunks of copha in your dough.
I have also used oatbran to make these and they still taste great. They won't be exactly the same as they won't have that wheaty flavour but it is still yum.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. These are really good and easy to make, thank you.
Oh so easy. Foolproof recipe. I lowered the temp a little after the initial time and left them for a little longer as I enjoy the buttery crunch. Absolutely delicious. As my husband said, ‘They’re so much better than the bought ones’. High praise indeed!
